The extraction of Olive Oil involves the olive fruits crushing. This step is cruitial to the whole process. Creating an excellent extra virgin olive oil starts with this step. The olive mill master chooses the batches of olives to be processed each time. When olive oil comes from olive fruits from a single variety only, the olive oil is called monovarietal. In products of this type we can understand the flavors, aromas and taste which one is dominant upon the other of the olive variety. Monovarietal olive oils can have a further complexity in their aroma and taste when olive fruits with different matury stages are crushed together.
