Tombazis Estate Extra Virgin olive Oil
SINGLE ORIGIN:
Our greek extra virgin olive oil comes from the world famous and well known variety Koroneiki. The variety is famous for its rich aromas as well as its high percentage of monounsaturated fat and polyphenols. Even though the olive fruits are small in size they have a high oil yield. The harvest takes place in November while the olives are still unripe. This ensures high levels of beneficial ingredients extracted to the olive oil such as polyphenols and olecanthal.
The History of the Family
The history of the Tombazis family starts from a very old age back in 1668 was first situated in Hydra island, Greece. The name of the Tombazi brothers wrote history as two extremely successful admirals who contributed greatly to the liberation of their homeland during the 1821 Greek Revolution. The Admiral Tombazis had friendship with the Governor Ioannis Kapodistrias, who brought two loquat trees which the governor personally brings from Corfu and plants them with his hands on the estate. So, the little orchard begins to take its first beautiful and historical form as a land.
The exceptional quality of Tombazis olive oil in the 1900’s world-famous Paris Exhibition, was awarded with the world’s gold medal for its unique quality. Returning to Greece with the gold medal, Tombazis olive oil is highly recognized and becomes the exclusive supplier of the royal family since 1900! In this same historic piece of land, the tradition of unique quality continues nowadays. It is a great honor and pleasure to continue the difficult road that was launched over 150 years ago
The Process:
The olives are collected by mechanicaly vibrating harvester sticks and are placed in special crates. These plastic crates allow the fruit to breathe and not be spoilled before entering the olive mill. The condition of the olive fruits is maintained on a high standard level and the milling takes place in less than 24 hours after harvesting. After milling the oilive oil is filltered immediately to ensure its quality longevity. For storage, stainless steel tanks are used with addition of a nitrogen gas on top to prevent oxidation.
