Organic Extra virgin olive oil:
Organic Extra Virgin olive oil is olive oil with strictly defined physico–chemical and organoleptic characteristics defined by the International Olive Councils trade standards for olive oil and the legislation in force regarding organic cultivation in each country.
Extra virgin olive oil: virgin olive oil which has a free acidity, expressed as
oleic acid, of not more than 0.80 grams per 100 grams and the other physico–chemical and organoleptic characteristics of which correspond to those fixed for this category in the standard mentioned before.
Organic cultivated products do follow a certification process by a certification body and follow the local legislation that defines the substances allowed to be used, the quantities and the maximum residue limits for contaminants.
